aka how one Iowa guy lost over 200 pounds and gained his life back. I can not say enough about how positively the Atkins Diet and low carb in general has been for me. I went from a 429 pound guy who could barely make it up a flight steps to a guy running half marathons and rejoining the National Guard. My health is fantastic, and my blood work (cholesterol, triglycerides, blood pressure, heart) could not be better.

I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent's comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep. Most of the recipes, I will be demonstrating have my seal of approval for taste and ease in preparation. :-)
Here is the Mock Danish recipe:
2 oz Cream Cheese, softened

1.5 - 2 tsp Splenda (**count against artificial sweetener count for the day)

This video is the second in the Temptation Resistance series. Accountability is probably one of the most helpful suggestions I have for new dieters. Being accountable to oneself and to others absolutely helps fight the temptations. I was so much less likely to go offplan when I knew others were also around me looking for what a low carber really ate.
So rather than being a negative, the cynics, which I readily admit I was at one time, and the naysayers were a HUGE blessing in disguise.

Having a successful Induction phase of Atkins is so much more than just losing weight. It is about getting your eating under your control again, getting your blood glucose levels stabilized, starting to learn new healthy habits with food, and finally to experience the magic of ketosis to the person needing to lose weight.

Low Carb Chocolate Cake (courtesy of Linda's Low Carb Site)
1 TBS Butter, microwave for 10 seconds to soften
1 Egg
1 TBS Da Vinci SF Vanilla syrup
2 TBS Splenda
1 TBS heavy cream
Pinch salt
2 TBS cocoa
Mix together all the ingredients until it is as smooth as possible. It should look similar to cake batter at this point. Microwave for 1 minute. For the special treat, add 1 TBS of whipped heavy cream (sweetened with Splenda).
Makes 1 serving
With granular Splenda:
Per Serving: 267 Calories; 23g Fat; 9g Protein; 11g Carbohydrate; 4g Dietary Fiber; 7g Net Carbs

Low Carb Cauliflower Bisque:
1 small onion, diced
2 stalks celery, finely sliced
1 TBS butter
1 Medium cauliflower, chopped
3 cups chicken broth
1/2 cup cream
Salt and pepper

In a large frying pan, saute the onion and celery until translucent and tender. Salt and pepper to taste. Add cauliflower and the broth; bring to boil. Change heat to medium-low for 20-25 minutes. Add Cream. Use a stick blender or blender to liquify the soup until completely smooth and thick. Add salt and pepper, if needed. Optional toppings: Cheddar cheese or real bacon bits.
Makes about 8 servings.
Nutrition Info: 102 Calories, 6g Fat, 5.8g Carbs, 2g Fiber, 6g Protein

My second cooking show on how to make low carb comfort foods. Fauxtatoes are a great dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It's the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes.
Try this recipe; I think it'll be a hit with you as well!
Recipe:
1 Head Cauliflower
2.5 TBS Butter
1/3 cup Heavy Cream
1 Chicken Bouillon cube
1 tsp salt
White pepper to taste
Directions:
* Cook Cauliflower until fork tender. Drain well.
* Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scr*pe the sides of the bowl a couple times to prevent lumps.

or its sister question, "Can I lose XX amount of pounds by this date?" In this video, I respond to the other most popular question by new people starting the Atkins Diet. I am always concerned when I see these types of questions in that the poster perhaps is looking for a quick answer to their weightloss problem. In my opinion that quick answers are often wrong or temporary answers at best.
Sure, it's natural to have goals and use them to motivate you. It's also natural to be curious to see how much you will lose on Induction (typically 5-10% of your total weightloss goal). Where it goes astray is that it focuses on the weight loss as being the most important part, and does not acknowledge the equally important question of what do I have to learn during Induction.
In the end, I hope everyone achieves their goal as quickly as they desire it if possible, but if not, I hope they realize how far they have come from where they were and are motivated by that rather than be negative about missing the date.

I describe my half marathon run at the IMT Des Moines Marathon weekend (October 15, 2006) At one point in this video, you also get to see that I am not the only runner in my family. :-)
There were points in this half marathon where I questioned myself again. What guy did I want to be? The guy who quit or walked the remaining amount, or the guy who gutted it out as much as possible. There will certainly be other times that I can improve upon what I did and learn from the lessons. My low carb journey just got a little further down the line with this race.

I produced another Atkins Diet Quick Hits videos. In this one, I deal with question of how long to stay on Induction and what the warning signs to progress to the Ongoing Weight Loss Phase. I normally get this question from those with lots to lose or those people who become carb phobic. My response normally goes - you can stay on Induction for a really long time, but you should progress to OWL when you hit one of the warning conditions.
Here are the warning signs:
1. poor exercise performance, prolonged fatigue, or tiredness
2. Blood work comes back out of wha*k - One of mine came back borderline for globulin, the doc recommended I start eating nuts. I had it rechecked shortly thereafter, and it was fine.
3. Boredom with the food choices.

In this Atkins Diet Quick Hits video deal the question "how fast did I lose the weight?" and "if you lost it slower, do you think loose skin would be less prevalent?"
I responded that I averaged about 4.3 pounds per week during much of the weight loss phase, and over 3 pounds throughout the 15 months of the diet. I advised against intentionally slowing down the diet by overeating or eating when you aren't hungry. I do HOWEVER recommend eating above one's Basal Metabolic Rate to avoid starvation mode and crash dieting, such as water restriction. I have read a story where the winner of the first Biggest Loser gained 35 pounds of water within 3 days after their weigh-in due to lost water weight. Eat according to the plan and ~3-5x per day, and you should be fine.
The whole point is to lose fat cells not muscle mass as much as possible. If you are worried about lost muscle mass, keep exercising and gauge your long term performance as a key indicator.

In this Atkins Diet Quick Hits video, I deal with the question similar to the zero carb video, but slightly different. Do we eliminate all sugar from our diet with Atkins? The answer is surprising to some that it is no. What we do eliminate is ADDED sugar, and limit the natural sugars that is found in food. You are still eating natural sources of sugar like sucrose or lactose in things like pumpkin or tomatoes or cream cheese, but you have restricted that amount to a level where your blood glucose is under control.
I welcome these sorts of question, so I can clear up any confusion that might exist. It is then that I know these people will be that much more successful in making wise choices.

September 28 - Quad City Marathon (It is back on, and I am gearing for the sub 4)

It is very common that I read questions or statements from new Atkineers saying, "How come I feel so tired?" "Why do I have such a headache?" "I have no energy what is this diet doing to me!" One of the problems is no one forewarned them about Induction flu. Induction flu is simply the body burning its last remaining glucose and stored glycogen for energy, and suffering withdrawal effects. It is very similar to what happens when runners "hit the wall" and cyclist "bonk." In addition to the physical withdrawal symptoms there are the mental symptoms as well. Think of drug addict, are they necessarily pleasant to be around or in high spirits even though they are doing something good. Well the carb addict has the same reaction; I personally was irritable for the first 2 or 3 weeks as I had to figure out how to eat, exert control over what entered my mouth, and regain new comfort foods. It is a dramatic change, and some people resist change.
The good news is it is just temporary. It typically only last a few days, but for some the mental effects might last longer. It also shows you are on the right path and making true progress on getting rid of the excess fat. The silver lining is indeed that by the end if you continue the follow the plan you will be burning fat for fuel.
You'll have to watch the video for my suggestions on how to lessen the effects.

In the fourth video of the "Atkins Diet Quick Hits" series, I deal with a question I get from new people asking about a certain lower carb food or frankenfood and if it is ok due to its low carb. It is often not on the Acceptable Foods List or filled with ingredients not on the list. This is when I get into the discussion why the first phase of the diet is more than just reduce your carbs to less than 20g per day.
Here are the main goals of any Induction phase:
1.) Get into ketosis and see its benefits
2.) Get used to the food selection
3.) Control one's eating habits and prove that control to yourself
4.) Set stage for future weight loss and ability to detect future problem foods when you readd them later
Not following the Induction rules and the Acceptable Foods List erodes the guarantee of your success.

In the this video of the "Atkins Diet Quick Hits" series, I comment on a question I got from a well-meaning low carber. His question was on the amount of what he was eating. I took his question and ran with it though to a different topic. Starvation mode dieting is never good, and similar is zero carb dieting. I am pretty convinced that for most people going zero carb is an unnecessary step. Sure there are some very metabolically resistant and / or people suffering with hyperinsulinemia.
For the most part, most people should be getting their veggies in and not fearing adding back a reasonable amount of carbs. Trying to discover what the magic number per day can certainly be trying, but your health will appreciate it. Thinking zero carbs is the answer also misses number of things:
* phytonutrients without getting more chemicals
* fiber-rich vegetables
* carbs present in other non-veggie sources, like nuts, eggs, or cheese
Unless you are really hyper sensitive to carbs, enjoy the variety of nature and food selection.
